Oh so yummy!

Most mornings it is around 11:30 by the time I get around to eating breakfast...between getting Hunter and I ready for our day, and doing laundry, dishes, etc...breakfast gets banished to the bottom to the to-do list:) 

Earlier this week I decided to try a yummy baked oatmeal recipe that a friend had given me...and oh my it turned out yummy!

Now each morning I just cut myself a sliver and voila, breakfast is served!





Here's the magic combination:
1/2 cup cooking oil (I used veggie oil)
2 eggs, beaten
1 cup sugar (I used brown sugar)
3 cups oatmeal
2 tsp. baking powder
1 tsp. salt
1 cup milk
Mix it all together, spoon it into a pie pan, bake at 350 for 30-35 mins, enjoy!!

I really like mine warmed up with some apple slices or fresh fruit...but if you like it moist, it would be delectable with a little warm milk and almonds on top...or raspberries...or blueberries...or really anything;)

  1. This was really yummy :) I put a touch of vanilla and some chopped walnuts in mine.....in the morning i warmed it with some milk and added a sliced banana. I would like to try baking with some apples or in the fall add some pumpkin to the mix. It is even good cold. I have a great egg/cheese/spinach recipe that I cook in muffin tins....love to share. Give Hunter a kiss :} Grammy

    1. I forgot to add to the recipe that I put a few drops of vanilla in as well!! sooo good:) I thinkg it would be great with some pumkin/apple too...the possibilities are endless;)

  2. Spinach Mini Quiche....2 cups Frozen spinach (thawed)
    16oz EggBeaters (mix it up-whites or green peppers)
    1/2tsp garlic powder
    1/2tsp italian seasoning
    salt/pepper
    1/4cup Bacon Bits or 3oz bag I used 1/2 bag and froze the rest for another time
    1 Real Egg
    2 cups shredded cheese
    Spray Muffin Tins with Pam.....Mix All ingrediants together....Fill cups
    Bake 375 25min when done...Cool I then put a Freezer bag.....Pop one in the microwave for 35 seconds Serve with a piece of toast or just as is...Quick and Easy.....Hope You ENJOY :} LOVE YOU GRAMMY
