Pour yourself a glass...
A few nights ago, I made an Asian inspired stir fry for dinner...and in typical me fashion, I made enough rice to serve at least 10 people...(anyone else ALWAYS overestimate when cooking rice??? I swear the stuff multiplies while cooking...hehe)
So after we ate we had nothing left except a big bag of cooked rice...
and not wanting it to go to waste, I decided to try my hand at homemade risotto...and it turned out pretty yummy so I thought I would share the recipe...
Sorry, I have no exact amounts, I usually just cook to taste and throw things in as I go...
Creamy Shrimp Risotto:
Cooked rice (mine was brown rice, but whatever works)
Frozen shrimp (de-veined and peeled)
White wine
Shallots
Minced Garlic
Heavy whipping cream
Parmesan cheese (the shaky kind you put on pasta)
Lemon Juice
Instructions:
Cook your shrimp (I didn't defrost it first and it cooked up nice and juicy) in white wine with your shallots and minced garlic, over medium heat. add more white wine. then pour in some heavy whipping cream and sprinkle some parm. cheese over it all, and stir. add more white wine. add your rice and stir all up...add more cream and parm. cheese until you reach the consistency you like. add more white wine. then add lemon juice and salt and pepper to taste...
Dish it out...sprinkle on some cayenne pepper (if you like a little kick to your food), pour yourself a glass of wine and enjoy!

Weekend Romping...
On Friday night, Mike and I went on our first date since Hunter was born. Just us. No baby in the back seat. No schedule to concern ourselves with.
It was wonderful on multiple levels...we drank sangrias and ate spicy shrimp at the bar and conversed with each other like we were on a first date... we intentionally directed the conversation away from our kids (Sadie included, you would be surprised how much we talk about her, ha) our finances, and our house and focused on talking about us as a couple:)
As we flew through the snow covered fields, I grinned from ear to ear under my helmet. It reminded me of the early days of our relationship where we spent every weekend romping around on 4-wheelers and snowmobiles...and just like our Friday night date, it was so refreshing for me as a wife and mom...
Anyone else have a great weekend? Anyone else know what I mean when I talk about needing refreshing dates with my hubby?

We bought overpriced coffee drinks at the Starbucks in Barnes & Noble, and perused the rows and rows of books like intellectual impostors...we laughed. we held hands. we ended up in the kids book department, of course. We went home with the Jungle book and the Berenstien Bears.
On the ride home we found an old cd and belted out "Wide Open Spaces" with the Dixie Chics and "You Had Me At Hello" with Kenny Chesney...
It was so refreshing. The best part? Coming home and saying hello to Hunter, hugging and kissing him with renewed vigor, knowing that we (mom & dad) had some much needed alone time to reconnect and remember just how much we loved each other.
We woke up on Saturday to snow, which made the finale of our weekend even better. On Sunday we loaded up our snowmobile headed to our friend's place to go riding after church. (Hunter was warm and snug at Grammy and Pappy's house for a few hours).

Seventeen...
Today I was driving down the road across from our local high school, when I passed an old red jeep with two young girls behind the dash…their hair was long and wavy and they had their shades on. Instead of perfectly matching outfits and sensible winter coats, they wore layers of brightly colored hoodies and tank tops, skater style. They were living it up, cruising down the road like they had stolen a piece of freedom and were taking it for a joyride, grinning from ear to ear…
They made me smile as my thoughts drifted back in time. It wasn’t long ago that I was seventeen, and when driving around with a friend riding shotgun was the most exhilarating feeling. Those were the days when a little makeup and a cup of coffee could quickly hide the fact that I had only slept a few hours the night before, and greasy diner food was always on the menu, but never on my hips. I remember feeling like the world was at my fingertips, and I was most certainly invincible in my Ford F150.
Fast-forward 5 years…now my only requirement for a vehicle is if the door will open wide enough to remove a baby carrier in a crowded grocery store parking lot.
Wow, how quickly things change…
And I thought, do I miss being seventeen, and having no responsibility? Heck yes. Would I trade kisses from my husband, and smiles from my baby for that time back? Heck no.
I do, however, understand better the old expression, claiming, “Youth is wasted on the young”…
So in true Brad Paisley style, here’s what I would tell myself if I wrote a letter to me at seventeen:
Be more adventurous…go bungee jumping in Costa Rica and then call mom and dad to tell them all about it…do not listen to your sister when she tries to talk you out of it. In a few years time you will be responsible for the lives of others and will not be able to pull any crazy stunts…
Do not waste a single minute standing in front of the mirror, asking, “Do I look ok? Are my thighs getting big?” YOU LOOK FINE… APPRECIATE YOUR YOUTHFUL BODY, you will look back at pictures and wonder who that skinny girl is wearing your smile… remember that you are your toughest critic…
Also, do not waste a single minute loving someone who you will not know in years to come…someday soon the man of your dreams will come along, and you will wish that all the “I love yous” you had ever said would be snatched back out of the past and shoved back in your mouth and spoken only to him.
Do not lose sight of the Lord in your pursuit of pleasure. I know life seems exciting now and it is hard to sit down and contain yourself, but trust me, there are far more exciting things in your future…things that are miraculous and life changing… If you seek God’s will, not yours, these things can be yours at a far lesser price.
Also, remember, GOD IS YOUR FATHER AND HE LOVES YOU MORE THAN ANY PERSON ON THE FACE OF THE EARTH. Rest in that knowledge and stop being so antsy.
Put all that bottled up energy to good use. Build something, go overseas, join a cause, INVEST IN OTHERS.
RESPECT your parents and love, love, LOVE them. Someday you will look back and realize that they did a far better job than you thought. Remember they are human too, and that perfection is not the goal, humility is. Trust them. Hug them. THANK THEM.
And finally…SLOW THE HECK DOWN!! What’s your hurry anyway? You will grow up, you will get married, you will have a house, and you will be a mom…so come up for air once in a while and BE CONTENT where you are…before you know it you will be rocking your little boy to sleep and singing lullabies, wondering where the years went.
Know that you are blessed beyond compare and that you are surrounded by people who love you. THANK GOD FOR THIS.

I know there is a plethora of other things I could add to this list, but my hubby is in bed waiting to snuggle and my eyelids are all droopy (come on now, its not like I’m 17… sheesh;) so I will leave it at that.

Banana Oatmeal Muffins...
For the last few weeks I have really been trying to cut back on how much sugar and white flour I eat, since I have always been a sugar-a-holic and mommyhood is inspiring me to take better care of myself (plus I would love to lose those last few lingering prego-pounds;)
In an effort to save time, I copied and pasted the original instructions below:
Preheat oven to 375 degrees
Mix all ingredients except the chocolate chips together, and let sit while you prepare the muffin pans.
Spray a muffin pan and/or liners with with non-stick spray.
Stir the chocolate chips into the oatmeal batter.
Divide batter into 15 muffin cups. They should be just about filled.
Bake 20-30 minutes, you’ll see the edges just starting to brown and they will be firm to the touch.
I wasn't sure if the recipe called for sweetened or non-sweetened almond milk, since there are both versions of vanilla almond milk...
so I used unsweetened, but added 2 packets of truvia to the batter, just for a little sweetness=)
I was very skeptical of the results until a few of my girlfriends tried them last night and reassured me that they taste just like a healthy muffin should...key work here being healthy, hehe...
and this morning I nuked one and smeared a little butter on it and it was deeeelish=)

Handmade Handwarmers!
Hey everyone =)
This past December was a crazy month for me... in addition to adjusting to life with our little guy, I challenged myself to do a primarily handmade Christmas, something that I know a lot of folks did this year. I absolutely love giving and receiving handmade gifts, I believe there is just something special about them that is unparalleled by any store bought present.
One of the gifts that I made quite a few of this year were handmade handwarmers:
Heart shaped for the ladies on my list, and camo/orange squares for the guys...
I added evergreen scented oil to the filling, so they become wonderfully aromatic when heated =)
They were so simple...
1st: I cut out heart shaped pieces of red fleece, as well as square pieces of camo and orange fleece...
2nd: I sewed them together, leaving about a 1" opening in order to fill them...
3rd: I stuffed them with long-grained rice mixed with evergreen scented oil...
4th: I sewed up the openings and trimmed the edges nice and short (I didn't have to turn them inside out since fleece edges will not unravel)...
5th: I wrapped them with brief instructions for use =)

Photo Marathon!
Ok, so I have roughly 140,932 pictures from the weeks that have passed since I posted last, and I know that so many friends and family come here to check out the little man... so if you will bear with me...lets run a little photo marathon together, shall we?

Happy New Year!
It's 2012!!! Can you believe it?!?
In honor of the new year, I am going to be changing around a few things around here...I started with my header and profile...what do you think?
I like the fresh look and I love Hunter's little moccasin booties in the picture, aren't they cute?
I am also hoping to categorize my posts even better and make some new buttons to match my header...
and I am planning on posting more often, depending on how much time I have each day=)
